Egg and Mango Chutney Flatbread

Have you ever heard of Jamie Oliver? We discovered his Quick and Easy Food show on hulu and it is so entertaining. The recipes really are quick, easy and visually it is absolutely beautiful. The only complaint is that some of the ingredients are not necessarily easy to find on the grocery store shelves here in the states.

One of the first things we tried was this breakfast flatbread and it quickly became a favorite. I wasn’t sure how I would feel  about the mango chutney but it is delicious. However, I bet you could use some other kind and it would work just as well to add that bit of sweetness to balance the tang of the yogurt and bite of the peppers.

What you need:

4 eggs, soft boiled

100 grams of self rising flour (somewhere between 2/3 and 1 cup of flour)

6 TBS plain yogurt

2 TBS mango chutney

1 fresh red chili pepper, chopped and seeded

Olive oil



What you’ll do:

In a small bowl mix together flour and 4 TBS of yogurt with a pinch of salt and 1 TBS olive oil until a dough forms.

Separate into two equal parts and roll each out into a rough oval shape about 1/2 cm thick.

Cook for three minutes or until golden brown on each side.

Put your flatbread on the plate and spoon 1 TBS of yogurt on each piece.

Add the mango chutney.

Add your sliced soft boiled eggs.

Sprinkle with your chopped peppers and add a splash more of olive oil.
